The 15/30ml jigger in two lines

Who it is for

For anyone working on recipes with many small ingredients. On a modern list the doses under three centilitres are the majority: bitters, syrups, supporting liqueurs, vermouth in reduced measures. Measuring those in a large cone means reading a film of liquid on the base, which is the simplest way to be a third out.

Why a small cone measures better than the bottom of a large one

Because the same quantity of liquid rises much higher in a narrow vessel. Fifteen millilitres in the bottom of a 60ml cone are a sliver of liquid, and two doses that look identical can differ by twenty per cent; the same fifteen millilitres in a cone built to hold fifteen reach the rim, and the rim is either full or it is not. The 15/30ml jigger exists for that, not because it is meant for people making small drinks.

Fifteen and thirty, that is half and one

The two sizes stand for half an ounce and an ounce with an approximation the trade has always accepted: a fluid ounce is 29.57ml, and thirty is the round number every European recipe book works in. Anyone making American recipes can use the 15/30ml jigger as though it were marked in ounces, with a gap of half a millilitre that no palate can tell.

How the dose is actually taken

Fill to the rim, not by eye: a jigger is a fixed volume tool, not a graduated measure, and all its accuracy rests on the rim always being in the same place. The correct gesture is to hold it low, pour until the meniscus shows itself, and tip in one movement. Hold it high and pour from a distance and you lose a few drops on every dose, which over two hundred drinks is bottles.

Choose this size if

Your list is built on recipes with four or five ingredients, you use a lot of bitters and syrups, and you already have a large jigger and need the one for small doses. Anyone buying a single jigger to start with is better off with a 30/45 or a 30/60, which cover the main measures; this is the second jigger on a station, and it is the one that makes it accurate.

Care

Rinse straight after use, because dried syrups leave a sticky film that alters the usable volume of the cone, and dry it to avoid marks. Stainless steel is untroubled by citrus acids, and that is why jiggers are made in this material and not in aluminium, which reacts with lemon juice.

Two jiggers, not one

An accurate station has two: a large one for the bases and a small one for the rest. The 15/30ml jigger is the second of that pair, and it gets picked up more often than you would think, because in a modern recipe the ingredients under three centilitres are almost always the majority.
