The mixing glass and Boston set in two lines
This is the pair that covers both mixing techniques: the mixing glass, in highly resistant glass, for stirred drinks and the Boston shaker, in polished stainless steel, for shaken ones, with the two pieces locking together when you need to seal. The glass also takes a shake, and the whole set is dishwasher safe. It weighs 600g and measures 10 x 10 x 28cm.
Who it is for
For anyone who does not want to choose between stirred and shaken. They are two different moves and neither replaces the other: with only a tin you end up shaking what should be stirred, and you can see the result before you taste it.
Stirred or shaken, the rule that decides
Stir when every ingredient is spirit-based and clear; shake when there is citrus, syrup, egg white or dairy. The reason is physical: shaking works in air and ice fragments, so the drink turns cloudy and light, which is what a sour needs and what ruins a Negroni. With this set you have both tools in one pair and move from one technique to the other without changing equipment.

A glass mixing glass that also takes a shake
In glass you watch the drink turn: the colour, the ice working, the level rising as it dilutes. For many bartenders that is part of the move, and in front of the guest it is part of the service. This mixing glass is made from highly resistant glass, built to take a shake as well: seated in the steel tin it becomes the glass half of a Boston, with no second vessel on the bar top.
How the two pieces lock
The seal holds, and that is what makes the pair usable as a complete Boston during the rush. In practice you get two separate tools for two techniques plus a third use, the shake, which comes from joining them. To open, strike the rim of the tin with the heel of your hand where it meets the glass.
What you need around it
A bar spoon for stirring and a julep strainer or a spring strainer for straining. On a vessel 28cm tall a long bar spoon is essential, because it has to reach the bottom without your hand going into the glass: with a short spoon you stir badly and warm the drink with your fingers.
Care
Both pieces go in the dishwasher, so at close the set goes through with the rest of the kit, with no separate wash. Between drinks a rinse is enough; keep the rim where the pieces lock clean, because that is where the seal is made. Polished stainless steel is not troubled by citrus acid.
How to stir properly
The bar spoon rests against the wall and turns between thumb and index finger: the spoon moves, not the arm, and the ice turns as one block without knocking about. Twenty or thirty turns are enough, and the guide is the frost forming on the outside of the glass. Through the glass you also see the level rise as the ice melts: that is the dilution, and you can judge it by eye.
