Why change them all at once
Because the part that ages is the rubber, and it ages with time more than with use. A station with pourers bought at different times has slightly different flows from bottle to bottle, and whoever counts the pour ends up compensating without realising. The air hole, in one line
As liquid comes out, air comes in through the hole and stops the pressure dropping inside the bottle. Without it, the flow stops and starts, and a pour in gulps cannot be counted: that is the technical reason a bar pourer is more than a spout, and the first thing to check when a bottle starts pouring badly for no obvious reason.
A metal pourer does not belong on every bottle
It goes on the bottles used every night: the white spirits, the vermouths in service, the bitters for long drinks, the main syrups. Bottles opened once a week are better kept capped, because the air hole works both ways and lets the contents breathe even when nobody is pouring: a delicate liqueur left open for a month loses its aroma, and the spout collects dust meanwhile.
Where to keep the spares
Dry and closed away, not in the drawer with the tools. Rubber ages on its own, even unused, and faster in heat or light: a box kept next to the glass washer or on top of the fridge uses up the spares before anyone opens it. On a cool, closed shelf the spares stay good for the next change.
Care
Pull all the pourers at the end of service and soak them in hot water, then rinse and dry. It is the round nobody wants to do, and it decides how long the pourers last: a clear spout keeps its bore and its flow, so the count stays true.
