Ice Scoops
The ice scoop is a hygiene rule before it is a tool: ice is taken with the scoop made for it, never with the glass. A chipped glass in the ice well is invisible and dangerous. Here are the 10oz scoops in eco wood and in the classic version. Below, the guide on why it matters and how to use it.

Ice scoops: a small tool and a firm hygiene rule
It looks like the most harmless task at the bar, yet scooping ice the wrong way is one of the most serious mistakes you can make behind the bar counter. A dedicated scoop is not a convenience: it is a food safety tool, and one of the first signs of whether a venue works to a standard or improvises.
Why never a glass
Using a glass to scoop ice carries two risks. The first is breakage: glass can chip against the ice, and a clear chip in a full ice well is in effect invisible. It would end up in a drink without anyone noticing, with potentially serious consequences. The second is hygiene: the hand holding the glass touches the ice, and ice is food and has to be handled as food. A scoop removes both problems.
Capacity and handling
The 10oz size is the reference at the bar: big enough to fill a glass in one or two scoops, small enough to move quickly during service. The handle gives a secure grip with wet hands, and the shape of the bowl lets the ice slide into the glass easily.
Material and storage
Wood-effect scoops suit an open bar counter, while standard models are built for practicality and quick cleaning. The rule, whatever the material, is about storage: never leave the scoop in the ice with the handle buried, because the hand that picks it up would contaminate the ice. Keep it in a dedicated holder, bowl clean and handle within reach.
Pieces to put on show
The Ice Scoop 10oz, Wood Effect pairs the hygiene rule with the look of wood: a secure grip, a generous bowl and a finish that suits an open bar counter.
The Ice Scoop 10oz is the practical version, quick to sanitise: the basic tool for handling ice safely during service.
The scoop is part of the station kit covered in bar counter equipment. For handling ice, see also the ice accessories.
Frequently asked questions
Why use an ice scoop and not a glass?
A glass can chip against the ice, and a clear glass chip in the ice well is practically invisible and dangerous if it ends up in a drink. The hand would also touch the ice, which is food. A dedicated scoop removes both risks.
Is using an ice scoop a hygiene requirement?
Handling ice with a dedicated tool, never with hands or glasses, is good food safety practice in line with HACCP principles. Ice is food, so it is handled only with clean, dedicated tools.
What size should an ice scoop be?
The 10oz size is the reference at the bar: big enough to fill a glass in one or two scoops, and quick to handle during service.
Where should the ice scoop be kept?
Never leave it buried in the ice with the handle inside, because the hand that picks it up would contaminate the ice. Keep it in a dedicated holder or outside the ice well, bowl clean and handle within reach.
