The Ade bitters bottle holder in brief
The Ade is a rectangular Lumian tray in satin 18/10 stainless steel, 22cm long, 15cm deep and 5cm high, weighing 480g. Four low sides, with open corners, enclose the bitters bottles on every side; on the front, the Lumian trident is pierced into the steel. Lumian calls it the Bitter Dispenser.
Who it is for
Bars working with several bitters: Angostura, orange bitters, Peychaud’s and house tinctures. Loose on the bar top, the bottles move every time the cloth goes round, end up behind the mixing glass and during the rush have to be found by eye. In the holder they have a fixed place: the hand goes there without looking, takes the dash and puts the bottle back in the same spot.
At home it is the tray that keeps order on the drinks trolley or the home bar, where small bottles are the first to vanish behind the big ones.

How a bitters bottle holder works
The sides are 5cm high, lower than a bitters bottle: they hold the base steady and leave the label and neck in view. The bottle is taken from above without lifting it awkwardly over the edge, and it is recognised by its label from a distance. The open corners let water out when you wash and dry it.
The weight works for the bartender. Four hundred and eighty grams of steel stay put on the bar top even when the last bottle is taken from one side only, and the holder does not slide on a wet bar mat. Satin steel does not show fingerprints the way polished steel does, so the tray still looks clean halfway through service.

Where the bitters holder goes
On the bar top, beside the stirring station, where the bartender reaches with the free hand while the other holds the bar spoon in the mixing glass. Bars with a long back bar put one at each station, so two bartenders are not passing bottles to each other. At the end of the night it goes to the stockroom whole, bottles inside, in one trip, and the next evening it goes back to its place ready to use. The satin holder matches a steel bar organiser, tins and bar mat, so it adds no extra colour to the bar top.
The bottles to put in it
The bottles are sold separately. The 50ml bitters bottle with dash pourer has a steel dasher for a consistent dash; the silver bitters dasher has a cork base and fits a glass bottle. For straws, picks and napkins there is the Angelia bar organiser, in the same satin steel. The other bottles are in the bitters bottles and atomisers category, and the other counter containers among the bar organisers.
The more you buy, the less you pay: 4 pieces -5%, 6 -7%, 8 -10%, on the same item.
Care
Empty it, wash with hot water and mild detergent and dry with a cloth. Wipe the base with a damp cloth at the end of the night, before a drop of bitters dries there. The maker does not state that it is dishwasher safe.
