What the double wall really does

Two skins of steel with an air gap between them work like a flask. The cold stays inside and the outer wall never reaches the temperature of the ice, so it does not fog with condensation: the tin does not drip on the bar top, does not soak the mat and does not slip in the fingers while you hold it to stir. Six hundred millilitres hold one stirred drink with the ice three quarters of the way up, or two short drinks served together. It is the capacity for the double order, two Negronis for the same table, which come out of one stir and so with the same dilution. For a single drink you fill it less and stir the same way, without the ice knocking about.
