The technique, in three steps

Ice to two thirds of the height, then the ingredients, then the bar spoon turning between thumb and forefinger with the bowl against the wall. The sign that the job is done is condensation on the outside: on steel it appears sooner than on glass, because metal conducts better, and that is the advantage of the material in seconds.

What you give up

The view. Inside an Alchemy mixing tin you cannot see the ice turn, so a bartender working in front of the guest loses the most visual part of stirring. The choice makes sense when the bar is not on show, when speed matters or when you travel; in a cocktail bar that makes the gesture part of the service, glass is still the choice.

You feel the cold in your hand

With a single wall, the chill passes to the metal and reaches your fingers, and that is one more reference: when your hand starts to feel cold, the liquid inside has come down in temperature. Care

Dishwasher safe. Dry it to avoid limescale marks, which show straight away on polished steel, and mind the lip of the spout, the thinnest part and the one that bends if the tin is dropped on that side.
