One pair or two

Two, kept apart. One for ice and one for fruit: tongs that have just picked up a lime wedge carry pulp and juice into the ice well, and from there into every glass of the night. It is the simplest rule to follow and the easiest to forget, and a second pair is far cheaper than emptying an ice well.

The spring, and why it changes the move

Spring-loaded tongs stay open on their own and close under pressure: pick up with one hand, squeeze, set down. Scissor tongs have to be opened by hand, so the move takes two steps and slips when your hand is wet. Over two hundred fills a night, the difference is felt in the wrist before it shows in the time.

30cm is a hygiene measure

The point is not comfort but where your hand ends up. With short tongs, reaching a cube at the bottom of a half-full ice well puts your wrist in the ice; with 30cm it does not. It is the same reason the ice scoop is not left in the well, and one of the things an inspection looks at.
