The mixing glass in two lines

Who it is for
For bars with Martinis, Manhattans, Negronis and the whole family of cocktails built only on clear ingredients on the menu. Those drinks are stirred, not shaken, and stirring them in any old glass is not the same thing.
What stirred and strained does
It chills and dilutes without adding air. The ice turns as a block against the side, pushed by the spoon; the liquid drops in temperature, and part of the ice melts into dilution water, which is an ingredient of the spec like the others. At the end the drink is strained and poured. The same ingredients shaken come out cloudy, lighter and with foam on top: a different drink, not a variation.

Why a clear body matters
Because it shows what is happening. The bartender checks the level of the liquid, the colour changing as the vermouth mixes into the spirit, and the frost climbing the outside, which is the sign the drink is ready. The guest on the other side of the bar watches the ice turn for twenty or thirty seconds: it is the longest a guest spends watching a technical move, and half the perceived value of a stirred cocktail.
Mixing glass or steel tin
These are the two routes, and there is one difference: with glass you see, with steel you feel. A mixing glass shows the ice turning and the frost rising, and at a bar in full view that is half the value of the move; a double-walled steel tin holds the temperature better and does not break, but hides everything going on inside. Bars working away from the guests often choose steel; those mixing in front of the guest stay with glass.
The frost is the timer
The reference is not the number of turns but the condensation forming outside: when the side is opaque with frost, the drink is at the right temperature. Stirring longer does not make it colder, it dilutes it, and dilution past the right point is the most common fault in stirred drinks made at home.
How to fill it
Ice first, up to two thirds of the height, then the ingredients. The order is not a quirk: with the liquid already in, the cubes drop and splash, and with too little ice the drink warms up while you stir. 16cm of height calls for a bar spoon of at least 30cm, so the hand stays out of the liquid.
Care
Glass, so the dishwasher is fine, loaded with space around it: the thick base makes it heavy, and knocks against other glasses add up. Dry it by hand if it stays on display on the bar, so the surface the guest watches while you work stays free of limescale marks.
