The Nishi Lumian in two lines
This is the 700ml Nishi Lumian: a mixing glass in finely worked glass with vintage fluting, 11cm across by 16cm tall, 600g on the scale.
Who it is for
For anyone stirring drinks every night who wants a vessel that stays put. On this tool the weight is not a drawback to put up with: it is the feature that makes the movement stable.
Why a light vessel works worse
In the turn the spoon pushes the ice against the wall, and the wall pushes back: a light vessel travels across the bar top and has to be recentred halfway through, which breaks the rhythm and usually knocks the spoon. With the 600g of the Nishi Lumian the hand holding it only guides, and the rotation runs unbroken from start to finish.

How the hand sits
Thumb and index finger on the rim, the other three fingers open on the body: the grip should not squeeze, it should only stop the vessel turning. Anyone holding it in a closed fist warms the glass with the palm, and on a vessel that stays there for thirty seconds the heat of a hand is a real variable. The fluting works exactly here, because it gives purchase without any need to squeeze.
The right ice for stirring
Large dry cubes, not crushed and not wet ice. The reason is that in a stirred drink dilution is controlled to the second: small ice has a lot of surface, melts quickly and brings water in before the liquid has come down in temperature, while a large cube chills calmly and dilutes only as much as is needed. Ice straight out of the well, meanwhile, already carries a film of water, and that film goes into the drink before the first turn of the spoon.
Seven hundred millilitres, and how many drinks
With ice to two thirds there are around 200ml of liquid left: two stirred cocktails, or one with room to spare so the cubes move properly. For a batch of three or four a larger format makes more sense, while for drink by drink service this is the size that covers nearly every case.
Why any glass will not do
Because a serving glass is narrow, thin and light, which is the opposite of what the job asks for. Narrow means the ice cannot turn as a block and knocks instead of rotating, throwing shards; thin means the glass does not hold the cold; light means it travels at every push of the spoon. The Nishi Lumian and its like exist because stirring needs all three the other way round.
Care
Dishwasher safe, loaded with space around it: 600g in a full basket becomes a hammer for the glasses next to it. The fluting should be rinsed straight after thick syrups, because residue dries in the relief and then only comes out by hand. Dry with a cloth if the piece stays on show.
