The Kashiwa mixing glass in two lines

This is the 700ml Kashiwa mixing glass, in glass cut with fluting of a vintage kind: 11cm across by 16cm tall, 600g on the scale.

Who it is for

For a bar with a list of classics and a counter in full view. The vessel of a stirred drink stays in the hand for twenty or thirty seconds in front of the guest, and it is the only moment in the service when a technical movement is watched from beginning to end.

The cut does a job

It is not only a period pattern. A mixing vessel covers itself in condensation within ten seconds of the first turn, and on smooth glass the holding hand starts to slip just as the spoon pushes: the relief breaks the continuous surface and gives friction back. The second effect is optical, because cut glass refracts rather than simply transmitting, and the turning ice multiplies across the faces of the cut.

How you stir, and for how long

The spoon runs between thumb and index finger and the bowl stays against the wall: the spoon moves, not the arm, and the ice turns as a block without knocking. The reference is not a number of turns but the frost forming on the outside: when the wall goes opaque the drink is ready. Stirring on does not make it colder, it dilutes it.

Care

Dishwasher safe, loaded with space around it because of the weight. The fluting holds syrup residue more than a smooth surface, so it pays to rinse straight after service instead of leaving the vessel waiting for the cycle. If it stays on show on the bar top it is worth drying by hand, because limescale marks show on the cut faces.
