The Ariake mixing glass in two lines
The Ariake is a Lumian stirring glass of Japanese design. It holds 700ml, stands 15cm tall, measures 9.7cm across and weighs 550g. The outside is cut with elliptical facets; the base is solid and the wall is thick. The rim has a pouring lip.
Who the Ariake mixing glass is for
For cocktail bars that stir in front of the guest: Negronis, Manhattans, Martinis, Old Fashioneds built in the glass. Stirring is the moment the bartender stands still and the guest watches the hands, and the glass in front of them is part of the serve. In hotel bars and speakeasies the station is in full view, and a scratched or chipped mixing glass gets noticed before the drink does.
At home it is the first tool for anyone moving from the shaker to stirred drinks. A Negroni made in the serving glass comes out different from the bar’s because it is not chilled and diluted the right way: in a mixing glass the ice works on the liquid before it reaches the glass.

How the Ariake mixing glass works
Fill with ice, add the ingredients and stir with the bar spoon until chilled and diluted. Then set the strainer on the rim and pour into the glass. Three moves, and the weight of the glass counts in each: 550g and a solid base keep the mixing glass steady while the spoon turns, without a hand on the other side holding it.
The thick wall is what holds the temperature. Thin glass warms faster and takes heat from the hand; thick glass slows the exchange, so dilution depends more on stirring time than on the room. The pouring lip sends the liquid in a single stream into the glass, with no drips running down the outside.
The elliptical cuts do more than decorate. Wet, cold glass is slippery, and a cut surface gives the fingers a hold when lifting a full mixing glass to pour.

What it pairs with
A mixing glass works with a strainer. Lumian pairs it with the Mercury hawthorne strainer, whose spring fits the rim, and a long bar spoon that reaches the bottom. If you prefer steel, for a vessel that will not chip if it drops in the sink, there is the 750ml Akira stainless steel mixing glass, also by Lumian. The other glass and steel models are in the mixing glass category.
A station with several bartenders is better off with two or three of the same: while one is being washed, the next is already on the bar top with ice in it.
The more you buy, the less you pay: 4 pieces -5%, 6 -7%, 8 -10%, on the same item.
Care
Hot water and a mild detergent at the end of service, with a soft bottle brush for the base. Dry it straight away so the cuts stay clear and free of water marks. The manufacturer does not declare it dishwasher safe, so hand washing is the careful choice. As with any glass, let it come to room temperature before it goes under hot water.
