What makes a good pourer
Three things, and none can be seen by eye. The grip of the rubber in the neck, which has to fit bottles of different diameters without turning and without letting liquid run down the glass. The inside wall of the spout, which has to be smooth, because any flaw creates turbulence and changes the flow. And the air hole, which keeps the pour continuous. A well-made metal pourer does these three things and keeps doing them after a thousand pours.

How to fit it and keep the rubber in shape
Set it straight on the neck and push with the palm, without twisting. Pushing straight keeps the rubber flat against the glass, with its full contact surface. For the same reason, pull it straight out rather than levering on the spout, and the spout stays straight for the life of the pourer.
When a metal pourer needs replacing
There are three signs, and none of them is breakage. The first is a drop running down the glass after the pour: the rubber no longer seals against the neck. The second is the pourer turning when you pick up the bottle, for the same reason. The third is the hardest to spot: the count stops adding up. If four counts give less liquid than before, the spout is partly blocked. The first two can be seen, the third only shows when you check against a jigger now and then.
Counting the pour
With a calibrated metal pourer the flow is steady, so the measure is taken by counting rather than watching the level. You learn it with water, checking against a jigger until the count always gives the same volume. Repeat the check whenever you change batch of pourers, because two different models have different flows and the count does not carry over.

Care
Take them off, soak in hot water at the end of service, rinse and dry. Hand wash only, with mild detergent on the rubber. A clean spout keeps its full bore and its flow, and the soak is what clears the dried sugar you cannot see from outside.
