The Lumian metal pourer in two lines
This is the Lumian metal pourer in 18/10 stainless steel, with a rubber seal that adapts to your bottles: 115mm long, 15g, and sold in packs of twelve.
Who it is for
For bartenders who count their pours in ounces. This pourer is calibrated to American bar standards, so the count matches a pour in ounces rather than a flow you have to check by hand.
Calibration, and why it changes the work
An uncalibrated pourer still works, but you have to build your own reference: pour into a jigger, count, adjust, and that number only holds for that model. With a calibrated Lumian pourer the reference is already the standard one, so anyone who learned to count in ounces works straight away without recalibrating. On a team that changes people, that is the difference between an hour of trials and none.

What 18/10 means
It is the make-up of the alloy: about 18% chromium and 10% nickel. The chromium forms the layer that protects against corrosion, the nickel adds shine and resistance to acids. On a tool that sits in alcohol and sugar for hours, it is the specification that counts, because a poorer steel pits exactly where the liquid lingers, inside the spout.
The seal, and the washing rule
The manufacturer specifically recommends hand washing in hot water to protect the rubber, and it is the same rule for every pourer: heat and commercial detergents harden the rubber, which loses its give and stops sealing. A Lumian pourer that is looked after lasts as long as its rubber, and the rubber lasts as long as you keep it out of the dishwasher.
Twelve pourers, and where they go
The front row takes six or seven: the white spirits, the vermouth, the bitter, the main syrup, the bottles that go into almost every drink. The rest cover the seasonal bottles and the two or three that rotate with the menu. That leaves a couple of spares in the box, which is the right thing to have: when a seal gives, it does so in the middle of service, and nobody wants to go looking then.
The more you buy, the less you pay: 4 packs -5%, 6 -7%, 8 -10%, on the same item.
Fifteen grams, and why you feel them
It is not much, but it sits on top of a bottle that is lifted and tilted dozens of times a night. A heavy pourer shifts the balance slightly and you feel it in the movement, especially when the bottle is nearly empty. This one is at the light end, and on a station where you work fast that adds up.
