What 157 BPM means
It is the tempo at which the maker states the flow is steady: 157 beats per minute, just under three a second. In practice it is the rhythm you count the pour to, and the maker’s way of saying the flow has been measured, not left to chance. A bartender counting at a slower rhythm still gets a repeatable measure, as long as the rhythm is always the same: the figure is a reference, not a rule.
Six pourers, and where they go
Six is the kit for the front row, the bottles you reach for without looking: the two or three white spirits, the vermouth in service, the bitter and the main syrup.
