40cm covers everything

Five finishes, and the light in the venue

Gold, copper and bronze work under low, warm light, the light of an evening cocktail bar, and go flat under white light; black does not reflect the spotlights over the bar; silver goes with any kit. Choose the finish by looking at your own room at nine in the evening, not at the catalogue photo, because that is where the spoon will be seen.

Plating stays out of the dishwasher

It is the only real caution with this tool, and the supplier states it: hot cycles and industrial detergents dull the coating in patches, for good. Hand wash with mild soap and dry straight away to keep the finish even. If you want a spoon to put through the machine at the end of the shift, choose a bare steel model, which also costs less.

The trident, and why three prongs

Because a citrus slice on a single prong spins and falls. Three prongs hold it still and carry it to the glass in one movement, and with olives and cherries you just set the fork down and press. It is also how you stop picking up garnishes with your fingers, still the most common habit behind the bar and the hardest to defend in front of a guest.

How to stir, and why the twist

The shaft turns between thumb and forefinger while the bowl stays against the side of the vessel: you move the spoon, not the arm, and the ice turns as a block without knocking. The twist gives those two fingers their grip, and it is why it has been on every bar spoon for more than a century. Twenty or thirty turns are enough, and the reference is not time but the frost forming on the outside of the vessel.
