The mojito cover in two lines
The mojito cover is a polycarbonate lid, 9.5cm in diameter, that sits on the glass while you build a muddled cocktail. You stir with the bar spoon without splashing and without handling the glass.
Who it is for
For anyone making mojitos one after another. It is the tidiest-looking drink of the summer and the messiest to make: mint, lime, sugar and crushed ice, stirred hard in a tall, narrow glass. Without a lid half the bar top ends up sticky, and so does the shirt of whoever is making it.
It also changes the drink
A muddled drink is stirred by pulling the ice from the bottom to the top with firm strokes: that is what spreads the sugar and the mint oils through the whole glass. With nothing closing the top, the stroke has to be gentle to avoid splashing, and the drink stays layered, sweet at the bottom and watery on top. Why polycarbonate
Because it gets dropped. A lid on the bar is put down, moved and knocked dozens of times a night, and glass in that role lasts a week. Polycarbonate takes the knocks, does not chip, sends no fragments into the drink and stands up to acids and sugar. It does scratch, and after a few seasons a mojito cover looks used: that is normal and does not affect how it works.
One measurement before you order
The stated diameter is 9.5cm, and it should be checked against the rim of the glasses you use: on a narrow highball it sits wide and covers well, on a wide coupe it does not. It is the only check to make, and it takes a tape measure on the glass you already have.
Where to keep it during service
Next to the ice well, not under the bar top: a mojito cover that has to be looked for does not get used. A typical summer bar station keeps it upside down on the muddling-hand side, with the muddler. The two always work together, and keeping them in the same place saves a movement on every drink.
Care
Wash it like anything that touches the drink, by hand or in the machine, then dry. Rinse it straight after use, so the sugar does not dry on the rim and the piece stays pleasant to pick up.
A muddled drink in three steps
First muddle the lime with the sugar, which works as an abrasive and helps release the oils in the peel. Then add the mint and press lightly without tearing it: the leaves should be bruised, not shredded, because chlorophyll from overworked mint brings bitterness and a dull green colour. The ice goes in last, and that is where the mojito cover comes in: close the top and stir hard enough to bring the sugar from the bottom to the surface.
