The hand bar spoon in brief
The Bars hand bar spoon is a 45cm mixing spoon with a teardrop bowl at one end and, at the top of the handle, a sculpted hand with its five fingers closed round the stem. The stem is twisted along its full length and the material is stainless steel. The hand is solid cast, with the knuckles and nails finished by hand.
Who it is for
Venues with a visual identity that carries through to the tools: speakeasies, signature cocktail bars, hotel bars with a menu that tells a story. The mixing spoon stays in the mixing glass for the whole stir, and the top is the only part the guest has in front of them while they wait. Of everything on the bar, it is the tool with the highest ratio of visibility to cost.
It also works as a display piece at trade shows and tastings, where the station is looked at before anyone uses it.

Forty-five centimetres, and the weight at the top
At 45cm the spoon reaches the base of 28oz tins, 750ml mixing glasses and tall tiki glasses without the hand going into the glass. It is the length for large vessels, the one you need when two drinks are stirred together.
The cast head also does a practical job: it acts as a counterweight above the rim, and a spoon left in the mixing glass stays where you put it instead of sliding in. A light spoon ends up at the bottom, the handle gets wet and whoever picks it up gets their fingers in the drink. In a service the spoon is put down and picked up twenty times, and twenty times count.

What the twisted stem does
The twist serves two moves. The first is spinning between index and middle finger when stirring in the mixing glass: the wrist stays still and the bowl runs round the wall without knocking the ice, which is how you avoid over-dilution. The second is layering: liqueur poured down the twist runs slowly and settles on the one below without mixing, and the layer stays clean even in a narrow glass.
The more you buy, the less you pay: 4 pieces -5%, 6 -7%, 8 -10%, on the same item.
How many to keep
One per station on show, plus a spare. The hand bar spoon is a tool that is used and looked at, and a bar with only one is back to a plain station on the day it bends or goes missing. The code stays in the maker’s catalogue, so a replacement arrives identical even a year from now.
The hand bar spoon alongside the others
The Bars fits other decorated heads to the same stem: the three skulls and the medieval axe. The working versions, with muddler and crown, and every length are in the bar spoon category.
Care
Hand wash in hot water with mild detergent and dry straight away, running the cloth between the fingers of the sculpted hand, where water sits. Drying is what keeps the steel free of limescale marks.
