How to use it, and where
It sits inside the vessel, not on the rim: convex side down, against the ice, thumb on the handle during the pour. It works with the mixing glass, the Boston shaker and the parisienne, so it also covers the times you want to hold back the ice when pouring from one tin to another. It does not replace the spring strainer on shaken drinks, because it does not grip the rim: here the cubes make the seal.

Why people watch a stirred drink
Because it takes time. A shaken drink is done in ten seconds of fast movement; a stirred one is twenty or thirty seconds in which the spoon turns and nothing else happens, and in that time the person at the bar watches. That is why the finish matters more on this family of tools than on others, and why it is worth keeping to one line: a gold julep strainer next to a bare steel bar spoon looks like an oversight.
The move, in three steps
Rest the strainer on the ice, convex side down, bring your thumb onto the handle and tip the glass, holding both in the same hand. The liquid comes out on the side opposite your thumb, down the wall. If the strainer wobbles as you pour, it is almost always because it was resting on the liquid instead of the cubes: push it down until you feel the ice underneath.
What plated means
A thin layer of another metal over the steel: it changes the colour, not the structure. It is measured in microns and wears where it rubs, on the edge of the bowl that touches the ice and on the handle where the thumb presses. That is why the dishwasher is ruled out: hot cycles with industrial detergents dull it within weeks.
Care
Wash by hand in lukewarm water with mild detergent and dry straight away. Rinse the holes straight after drinks with thick syrups, because drying sugar narrows them. Store it flat with no heavy tools on top, because the bowl is thin and a bent bowl no longer sits properly on the ice.
