And that life starts when you decant it, not when you open the bottle. In a large container a slow product stays open for weeks: it takes in air with every squeeze, picks up microorganisms from the room and at some point turns. The colour tells you the family, the label tells you the product and the date. The colour serves the hand during service; the date serves whoever opens up and has to decide what goes in the bin. Masking tape and a marker are enough, as long as the date is the day it was decanted.
