The conical fine strainer in two lines

Who it is for
For bartenders who pour into narrow glasses. The conical bowl gathers the liquid and sends it to one point, so the stream is narrower and easier to control than from a flat mesh.
With coupes the difference shows at once
A flat strainer lets the liquid spread across the mesh, and at the end of the pour a few drops land outside the glass. With the conical bowl the drink stays together: it leaves from the tip of the cone like a funnel and goes where it is aimed. When the glass is already garnished, or the rim has been done with salt or sugar, one stray drop spoils the work done before.

What AISI 304 means
It is the alloy code used for food-contact tools: stainless steel with about 18% chromium and 8 to 10% nickel, hence the other name, 18/10. Chromium forms the passive layer that protects against rust, and on a tool that lives in citrus juice, which is an acid, that is the property you need. A mesh in ordinary steel ends up pitted.
The cone fills up more slowly
The second advantage shows with pulpy drinks. On a flat mesh the liquid spreads over the whole surface and sits on it; in a cone it slides down, and there is more room under the mesh, so the pour carries on without stopping to shake the strainer. It does not solve the problem like a deep bowl, but it pushes it further back.
How to hold it
Hold the fine strainer above the glass, not resting on it: the mesh that has just strained is wet with drink and should not touch the rim that goes to the guest’s lips. Grip the handle with the ring and little fingers, leaving thumb and forefinger free to adjust the angle while the liquid runs. With a cone the angle matters more than with a flat mesh, because there is only one exit point.
Where you notice it most
With drinks served in a coupe, which has a wide mouth, a thin rim, and often a garnish already in place. And when pouring two glasses in a row from the same shake: with a narrow stream you move from one to the other without stopping the pour.
Care
Rinse straight after each use, before pulp dries in the mesh. It can go in the dishwasher, placed so the spray reaches the mesh. Hold it up to the light now and then: a stretched or bent mesh no longer strains fine, and that is the time to replace it.
