Bronze is the middle choice, and not as a compromise. It is dark enough not to bounce light into the eyes of whoever is sitting at the bar, and warm enough to stand apart from bare steel. On a dark wood counter, or against a wall of amber bottles, it is the finish that settles in best.
There is a practical gain too: fingerprints and water marks show less on bronze than on gold, and far less than on black. Through a long service, where the tools get picked up wet twenty times, that is a difference you notice at the end of the evening.

Bronze or copper
They are the two warm tones of the line. Copper is redder and darkens with use, bronze starts dark and stays more stable over time. Anyone who wants the tools to age in view takes copper, anyone who wants them the same in two years takes bronze.
Care
Hand wash with mild soap, never the dishwasher. No abrasive sponges on the plating, and dry straight after rinsing.
