It drains rather than holds
A rubber mat gathers liquid in its own tray and keeps it there until somebody lifts it. Whatever you rest on it therefore sits in a film of water, and a glass turned upside down on rubber does not dry: it gets wet again. Here the liquid goes through the holes and lands on the surface beneath, which takes a cloth once a shift.

Two things rubber does better
They are worth saying, because anyone reading this is choosing between the two materials. The first is noise: a glass set down on steel makes a hard sound that rubber absorbs, and on a quiet bar you hear it. The second is grip: rubber holds a glass still even at an angle, steel does not, and a shaker put down in a hurry slides more easily on the grid.
Then there is rigidity. A rubber mat adapts to a corner or gets cut with scissors, a steel bar mat does not: the size has to be right first time, because afterwards it cannot be shortened.
Which of the three lengths
Three hundred millimetres is the single station size, the one that sits next to the shaker and takes one person’s work. Six hundred is the service size: it covers the build area of an ordinary bar and it is the one that sells most. Nine hundred is for a long counter worked by two people, or for a continuous strip in front of the taps.
The depth is always 105mm, which is set to run along the edge without stealing working surface. Anyone needing a wider area usually puts two side by side lengthways rather than looking for a deeper model.
Care
It washes by hand in seconds: hot water, a mild detergent, a cloth and it is back in place. Better kept out of the dishwasher. Bare steel, no plating to spoil.
