For the venue that sells wine by the glass and wants one thing to do at the end of the night: push in the stopper and press. A separate pump works, but it has to be found in the drawer, and during the rush the stopper that goes on without looking for anything is the one that actually goes on. The pump inside the stopper: how the wine stopper works
The head of the stopper is a plunger. Each press pushes out the air between the wine and the stopper, and a valve stops it coming back in. With less air in the bottle the wine oxidises more slowly: an open white that without a vacuum is finished after two days lasts considerably longer in the fridge, and the first glass the next evening still tastes as it did. To reopen, pull the stopper: the silicone seal lets the air back in and it comes away without forcing.
The ILSA stopper is designed for still wines. On sparkling wine a vacuum is no use and does not keep the bubbles: for that there is the clip-on pressure stopper, which does the opposite job.

Steel or plastic: what changes on the bar
A plastic wine saver stopper costs less and pulls the same vacuum. The difference is in two places. The first is the bar: an open bottle with a polished steel stopper can stand in view, one with a black plastic stopper cannot. The second is durability: the steel head does not crack, and the silicone seal keeps its elasticity after months of nightly use. A venue with four or five wines open by the glass keeps two or three packs, one stopper per bottle.
Choose the stainless steel wine stopper if
If you want a stopper with the pump inside, to push in and press without looking for anything, and you like it to be seen. If you prefer one pump with plenty of low-cost stoppers left in the bottles, the wine saver with hand pump and rubber stoppers costs less per bottle. If the problem is bubbles, the right stopper is the clip-on one.
Care
Rinse in warm water and dry. Keep it out of the dishwasher: the silicone seal and the pump valve do not take kindly to heat and detergent, and a stopper that no longer pulls a vacuum does nothing.
