Eco wood or black

Eco wood reads better on show and on warm counters. Black disappears and takes frequent washing better, so it is the choice for a service station nobody looks at. They are two answers to the same question, and the question is where the container sits: if the guest sees it, the material counts as much as the capacity; if it sits behind, it counts for nothing.

Six compartments, and what for

For small garnishes: olives, cherries, twists, fruit cubes. Thick slices and whole wheels have to go into a narrow compartment on edge and come out with two fingers instead of one, which across a busy service is a slowness that adds up. Anyone garnishing mostly with slices gains more from a model with fewer, wider compartments.

The height, which is the same as the black models

One hundred and seventy-five millimetres. That profile works behind the bar and builds a wall at the front, and it is worth saying here: a container chosen to be seen only makes sense where it does not separate the person building from the person watching. On the front of the bar the low steel models, 90mm tall, let the line of sight through.

What it will not take

High, prolonged heat. A compound that is 70 per cent wood does not go through commercial dishwasher cycles, which deform it and dull the surface: it washes by hand, in warm water. The compartments, if they are in technical plastic, follow their own instructions and can often go in the machine even when the container cannot.

The shade that ages

A wood compound changes tone over time, and on a bar in view that is exactly what you ask of it: after a year the holder looks like part of the room rather than something bought in. The other side is that two halves of a pair bought months apart will never match, so it pays to order both together if you need two.

Care

Hand wash every evening and dry fully, container included. Water sitting in the base of a wood compound is where every problem starts: first the smell, then the stain. And no scouring pads, which leave pale marks on eco wood that do not go away.
