Why AISI 304 in particular

Because it is the right choice for a spot that is permanently wet. What drips off the necks collects under the bar top, and with lesser steels that constant standing liquid brings pitting: small points of corrosion that start where the liquid sits and never go away. 18/10 stainless holds enough chromium and nickel to take that condition for years.

Steel or ABS

Steel lasts longer, takes knocks and sanitises better. ABS costs less, weighs less and softens the noise of the bottles. For a fixed bar in daily use steel pays for itself, because a rail under the counter takes knocks you never see: trolleys, knees, crates set down badly. For a seasonal station plastic is the sensible answer.

The 56cm rail on a fixed bar

It holds the bases of the list, arranged once and then left alone. The rule that applies at any length is that the order does not get changed on a whim: anyone who rearranges the line because it seems more logical to them costs the venue a week of slower service. If the order has to change, it changes with everyone and it gets written down.

When the 56cm is the better choice over the long one

When the counter is broken up. A sink, a well or a column breaks the clear run, and two short rails mounted either side cover what one long rail cannot. It also applies on a second service station, where only the bases are needed rather than the whole line.

Care

Unhook it and wash it separately every night, off the bar. Stainless takes detergent and hot water without trouble; what it does not take is liquid standing on it for hours, so dry it before remounting. No common steel wool on the surface, because it leaves iron particles that go on to rust in its place.

A steel rail costs more than twice a plastic one, and the question is fair. The sum is done in years: on a fixed bar in daily use a steel speed rail stays in service as long as the bar does, while plastic at that rhythm gets replaced. If the station is permanent, steel is cheaper over time; if the venue is seasonal, it is not.

The slots go onto supports that carry the load full, not empty: six full bottles are over six kilos, and the check is made by pushing down on the loaded rail before you call it mounted. A fixing that gives way always does it during a service, never during a test.
