The inner markings change the tool
A jigger without markings has two volumes: the cup is full or it is no use. With four markings this jigger becomes a four-measure tool and covers almost every measure on a list by itself: 15 for bitters and syrups, 30 for modifiers, 45 for generous bases, 60 for drinks built on two ounces. Reading a marking is not like filling a cup
Worth knowing: the rim is always in the same place, a marking has to be read. To read it properly hold the jigger at eye level, not down on the bar top, because seen from above the liquid looks higher than it is. It is parallax error, the same as with a kitchen measuring jug, and on a 45ml measure it easily costs two or three millilitres.
One ounce is 29.57ml
The 30ml of the small cup is the rounding the whole of Europe works with, and the gap is half a millilitre per measure: irrelevant in a single drink, and only systematic in batches of fifty serves, where it is worth recalculating in true ounces. For service at the bar, this is to all intents a one and two ounce jigger.
Choose this size if
You work on American classics, you make a lot of drinks built on two ounces of base, or you need one tool to cover the widest range of measures. If your list follows Italian recipe books, the 30/45 size is more direct, because 45ml is the measure those books use most.
Care
Rinse straight away and dry: syrup drying inside the cup leaves a film that over time reduces the usable volume, and on a precision tool that is a real fault. Check the inner markings against the light now and then, because that is where residue builds up first.
The jigger stays in the hand, not on the bar top
The right move is to hold the jigger low over the tin, pour until the liquid shows at the rim, and tip it in one go. Setting it down on the bar top and lifting it again loses a few drops on every measure, and pouring from a height loses more. Over two hundred drinks a night those drops add up to bottles, and it is one of the few costs you get back simply by changing a habit.
