The ergonomic muddler in two lines
This is the cocktail muddler in polycarbonate with a toothed head: 21cm tall, 95g, a shaped grip and four colours, black, fluorescent orange, fluorescent green and lime green.
Who it is for
For bars making Mojitos and Caipirinhas all summer. It is the everyday working muddler: it costs little, goes in the dishwasher without a second thought and survives a drop. A summer bar keeps two or three, because it is the first tool to get dirty and the one nobody wants to wash mid-service.
Toothed means citrus and sugar, not mint
It is the distinction hardly anyone explains, and it changes the drink. The teeth on the head bite into lime peel and crush sugar: they create friction, so they release the essential oils from the peel. On mint they do the opposite of what you want: they tear it instead of pressing it, and a torn leaf releases chlorophyll, which brings bitterness and a dull green. With a toothed muddler the right order is to muddle the lime and sugar first, add the mint afterwards and just press it once or twice.

Press and turn, do not pound
The right move is to press down to the bottom and turn a quarter turn, two or three times. Pounding gives you smashed lime and a bitter drink, because the white pith releases exactly the bitterness you want to avoid. The shaped handle is there for that: it gives a grip that lets you measure the force instead of putting it all in at once.
Why polycarbonate
Because it is the material that survives a summer bar. It takes knocks, does not chip, holds no smells and goes in the dishwasher with everything else, which on a tool used a hundred times a day matters more than anything. In return the teeth wear down over the years and the surface scratches: it is a piece you replace, not one you hand down.
The four colours, and what they are really for
Not only looks. At a station with several people, a different colour for each muddler lets you give one to whoever is on the muddled drinks and one to everything else, and find it without looking. The fluorescent ones show up in half-light, which behind an evening bar is no small detail.
Head diameter and the bottom of the glass
It is the second criterion after length, and nobody checks it. A wide head does not fit a narrow tumbler and works only in the centre; one that is too narrow leaves the lime whole against the walls. The right size covers most of the bottom of the glass you usually build in, so that as you turn the muddler you pass over the whole surface instead of a small circle.
