Who it is for
For bartenders working from recipe books of different origins. An American manual writes in ounces, a European one in centilitres, and a fair number of historic recipes measure in tablespoons: making drinks from mixed sources means converting in your head all evening, and in your head you get it wrong. The tablespoon is a real measure
The tablespoon is about 15ml, and it is the unit in which a great many recipes of the nineteenth and early twentieth centuries are written, the ones half the classic repertoire comes from. Read “a tablespoon of syrup”, pour by eye with a teaspoon, and you put a third of what the recipe intends into the drink. The Urano turns that conversion into a reading rather than a sum, which is why it is worth having even if you already own a two-cup jigger.

Short and wide, and not a flaw
At 7cm tall the Urano is a different tool from a two-cup jigger, which is usually around 13cm. A short body is less precise to fill, because each millimetre of liquid is worth more volume, but it is far steadier on the bar top: you can fill it without holding it, which is what you need when pouring from a heavy bottle or with the other hand busy.
How to read it
At eye level, never from above. On a multi-scale measure parallax error is the main problem: seen from above the liquid looks higher than it is, and on a small measure the error easily reaches ten per cent. The right move is to lift the tool until the scale is level with your eyes, read, and only then pour.
Choose the Urano if
You work from books and not only from spec sheets, you work on historic recipes, or you need a support tool that stays put on the bar top. If you are after the main measure for fast service, a tall, narrow two-cup jigger is still more precise and quicker to tip.
The three scales, and when they really matter
They matter when you work from a source that is not your own spec sheet: an American book, a recipe picked up on a trip, a period manual. There the conversion has to be done anyway, and doing it by reading rather than calculating removes the most common error of all, which is not getting the formula wrong but applying it to the wrong number. Bars working only from in-house specs already converted do not need a multi-level measure and are quicker with a two-cup jigger.
Care
Rinse straight away and dry, paying attention to the scales engraved inside, where syrups and thick liqueurs leave a film that over time makes them hard to read. 18/10 stainless steel is not troubled by citrus acid, which is why measures are made from it.
