The electric ice crusher in two lines

Who it is for
For the bar with juleps, Caipirinhas, swizzles and tiki drinks on the list, the drinks built on crushed ice rather than cubes. Crushing by hand with a Lewis bag and mallet works for ten drinks a night; at thirty you need a machine, and a 12kg/h electric ice crusher covers sixty to eighty glasses in an hour of peak service.


Twelve kilos an hour, and how many drinks that makes
A julep or a tiki drink takes between 150 and 200g of crushed ice. Twelve kilos is therefore sixty drinks, eighty with a light hand. The 2.7 litre container, full, covers about eight: crush, slide out the container, tip it into the crushed ice well and start again. Build the stock before service and top it up during the rush.
Crushed ice exposes a lot of surface: it chills in an instant and dilutes quickly. Recipes allow for it in the specs, which is why a julep is served filled to the rim and an Old Fashioned is not. It is not ice for serving on the rocks, and the ice crusher does not replace the ice machine: it works alongside it.

The two rules the supplier sets, and why they matter
First: hollow cubes only, the ones from a bar ice machine with a hole in the middle. A solid cube from a mould is harder and larger, and the blades are not made to break it. Second: not for continuous running. The 70W motor is sized for batches, one container at a time with a pause in between. An electric ice crusher left running for an hour straight overheats, so the stock for the rush is made before service, not during it.
The chute, and why it is wide
The ABS chute above the blades is wide on purpose: you tip in a full scoop of cubes in one movement, without feeding them one by one. That is the part of the job done during the rush, and a narrow funnel would be the bottleneck of the machine. The container slides out from the front and pours into the glass or into the crushed ice well.
Choose the electric ice crusher if
If your list has at least two or three drinks on crushed ice and dozens go out during the rush. If there is one crushed ice drink and ten go out a night, a cotton Lewis bag and a wooden mallet cost a fraction and make finer crushed ice. And if you need ice for rocks or highballs, that comes from the ice machine, not from this.
Cleaning
Wash the container by hand in hot water. Wipe the steel body with a damp cloth, unplugged. Rinse the blades with running water through the chute and let them air dry, because crushed ice leaves water in the mechanism and standing water is what marks steel.
