The 12 litre ice bucket in two lines
The 12 litre ice bucket is a round container in black polypropylene, with an inner drainer and a lid. It is sold by the piece and is made for service at the bar, in nightclubs and on catering jobs.
12 litres is a stock of ice kept next to the person serving, without a trip to the ice machine for every round.
Who it is for
For the bar whose ice machine is far from the service point. Every trip to the machine with the scoop is a minute when the bar counter is left unattended, and in the busy hours those minutes add up. A full ice bucket next to the station shortens the round.
For nightclubs and VIP areas, where the ice goes to the table with the bottles. For catering and events, where there is no ice well and the ice arrives in bags: the 12 litre ice bucket is where service starts from.
At home it is the container for garden parties, when the ice from the freezer does not last the evening.

Why the 12 litre ice bucket has a drainer
Ice melts, and ice left sitting in its own water melts faster. That is why an ice bucket with an inner drainer keeps the cubes dry for longer than a bowl. Meltwater drains through the drainer and collects in the base, below the ice, so the cubes never sit in water. A wet cube dilutes the drink as soon as it goes into the glass, and at the end of the night the difference shows in the ice thrown away.
Polypropylene
Polypropylene is a light plastic that takes knocks. A container that falls off the bar top does not shatter, while a glass or ceramic ice bucket in a crowded VIP area is a risk. Black does not show washing marks and sits with the fit-out of most late-night venues.

The lid
The lid closes the container between rounds: the ice stays covered when the bucket sits on a table or in a VIP area, and it can be moved without spilling. It comes off and rests alongside when service is continuous.
How it is used at the bar
It is filled before opening, as part of the mise en place, and placed on the side of the hand that takes the ice. With tongs or a scoop, never with the glass: a chipped glass in the ice means emptying the lot. At the end of service it is emptied, rinsed and left open to dry.
How many litres you need
12 litres is not the stock for the night: it is the reserve at hand, topped up from the ice machine or the bags in the quiet moments. A venue with one station uses one, one per side when there are two bartenders. On a catering job there is one per service point, so every bartender has their own and nobody waits for anyone else.
One container per station also means fewer hands in the same ice: everyone works from their own, with their own tongs, and the ice stays clean until the end of service. For a long event it pays to keep one full and closed in reserve, to swap with the one that empties.
The more you buy, the less you pay: 4 pieces -5%, 6 -7%, 8 -10%, on the same item. The discount applies automatically in the basket.
