The ice ball mould in two lines

Who it is for
For bars serving spirits neat or drinks made for sipping. For the same volume, the sphere is the shape that exposes the least surface to the liquid: it melts more slowly than any cube, and the drink stays as it was built for longer.
Why a sphere
It is geometry, not looks dressed up as technique. Of all solids with the same volume, the sphere has the smallest surface, and since ice melts from the outside, less surface means less heat exchange over time. A cube of the same volume has about a quarter more surface, and that difference is dilution time taken from the drink. The ice ball mould takes this advantage to its physical limit: no shape lasts longer.

A sphere in a rocks glass can be seen across the room and signals care without explanation: people who see one on another table ask for it at theirs. It is the kind of signal worth more than a line on the menu, and it costs as much as the water inside.
How to serve it without spoiling the drink
Put the sphere in the glass before the liquid, not after: dropped into a drink already poured, it splashes and breaks the surface, which shows on a neat spirit with its oily sheen. Pick it up with tongs rather than fingers, because the heat of the hand marks the surface and leaves it cloudy where touched. In a narrow glass, tilt the glass and let it slide down the side.
How long it really lasts
There is no single figure, because it depends on the temperature of the glass, of the room and on how much liquid surrounds it. What can be given is the comparison, which is the useful part: in the same glass with the same spirit, a sphere lasts noticeably longer than cubes of the same total volume, and the difference shows by the second third of the drink. That is why an ice ball mould is bought for drinks sipped over twenty minutes, not five.
The white core
It is air dissolved in the water, pushed inwards as freezing moves from the outside to the core. It is not a fault of the mould or the water: it happens in any domestic freezer. A clear sphere needs directional freezing, where the water freezes from one side only with the others insulated, and the cloudy part is then cut away.
Care
Dishwasher safe, food-grade silicone. Wash and dry the mould between batches and fill it to the line: too much water leaves a seam round the middle of the sphere, too little leaves one side flat. Keep it level in the freezer and away from strong-smelling food.
