Why a small cone measures better than the bottom of a large one
Because the same quantity of liquid rises much higher in a narrow vessel. The two sizes stand for half an ounce and an ounce with an approximation the trade has always accepted: a fluid ounce is 29.57ml, and thirty is the round number every European recipe book works in. How the dose is actually taken
Fill to the rim, not by eye: a jigger is a fixed volume tool, not a graduated measure, and all its accuracy rests on the rim always being in the same place. The correct gesture is to hold it low, pour until the meniscus shows itself, and tip in one movement. Hold it high and pour from a distance and you lose a few drops on every dose, which over two hundred drinks is bottles.
