Why aluminium, and why coated
Aluminium has two qualities that count on a tool held all night: it is light for the stiffness it gives, and it is cast, so the cup and arms come out in one piece with no welds for breaks to start from. The delicate point is bare aluminium in direct contact with juice, because citrus acid attacks this alloy: hence the coating, which acts as a barrier and keeps any metallic taste out of the drink. It is also why this press should never meet scourers or abrasive products.

Cut side down
It is the thing almost nobody explains, and it changes the yield more than the material does. The half fruit goes in the cup with the cut face towards the holes and the peel on top: under pressure the peel turns inside out like an umbrella and pushes the flesh against the holes instead of crushing it against the wall. More juice comes out, and the bitter oils of the pith stay on the peel side.
21cm of lever
The handle length is the part of the design that decides how much force you need. 21cm is the short, handy size, comfortable in one hand and small enough for a drawer at the station: it asks a little more force than a long model, but it is easier to control and works in tight spaces. Anyone with wrist trouble, or squeezing hundreds of fruit a night, does the opposite sum and looks for a long lever.
Where it sits at the station
A dark metal tool looks right on a bar top in view, but it weighs 300g and takes up 20cm: at a narrow station give it a fixed spot to the left of the citrus board, with the cup towards the well. Two bartenders on the same bar usually keep one each, because passing it back and forth is the quickest way to drop it and chip the coating.
Care
Wash by hand in lukewarm water with a mild detergent, straight after use. Clear dried juice from the holes with a soft brush; keep it away from scourers and the dishwasher, because industrial detergents and heat attack the coating, and the coating is what protects the aluminium. Dry it fully before putting it away, leaving it open.
