Who it is for
For anyone who wants the vintage shape without paying for plating. 18/10 steel and citrus
Eighteen per cent chromium and ten per cent nickel: it is the alloy that stands up to the acidity of lemon and lime juice, which is the most aggressive thing that goes through a shaker. A lower grade steel, with less chromium, goes dull and picks up marks after a few months of sours; this does not. That is why it is worth looking at the alloy and not only at the shape.

If you need a shaker that works every day and goes in the dishwasher without a thought, if you prefer bare steel to coloured finishes, if you want to try the family before committing to a plated model. If instead you are after a piece to show, the matt and coloured versions in the same family do a different job.
Why the parisienne came back onto the lists
For twenty years mixing was dominated by the Boston, which is faster, and the parisienne was treated as a collector’s piece. The return of classic drinking has put it back on the bar for a practical reason as well as a visual one: in a service where the drink is built in front of the guest, the shape counts as much as the technique, and a steel cone closing with a soft movement looks better than two tins slammed together. You lose a few seconds of speed, and gain the rest.
Care
No particular precautions: bare steel, so the dishwasher is allowed. The one thing to watch is drying it to avoid limescale marks, and checking the sealing rim, because a dent there ruins the seal and only shows up once you shake.
