The Selene conical fine strainer in two lines
This is the Selene conical strainer: a fine strainer with a long conical bowl and fine mesh, designed to finish the pour in one movement instead of three.
Who it is for
For bartenders who want to pour without stopping. The long bowl holds more liquid than a flat mesh and channels it down, so there is no need to pause halfway for it to drain.
The trouble with flat strainers
They fill up. With a shaken drink full of foam and pulp, the liquid sits on top of the mesh, and the bartender has to slow down, tap and start again; every pause is a moment when the drink moves and the foam breaks. The long shape of the Selene pushes that limit further: below the mesh there is room for the whole pour, and the liquid leaves from the tip as from a funnel.

Two properties that usually pull against each other
Fine mesh strains better but clogs sooner; a deep bowl does not fill up but usually has wider mesh. The long conical shape holds both together, because it increases the straining surface for the same opening: the liquid passes through a sloping wall, which is larger, instead of a disc. It is the same principle as a conical sieve in the kitchen, and the reason this shape has become the norm in bars working on clear drinks.
Where it sits at the station
Next to the tin, on a clean cloth, not in the sink and not in the ice well. A strainer left in the ice drops what it has caught there for the whole service, and by the end of the night that residue is in the ice of every drink that follows. Like any fine strainer, the Selene should stay in view precisely because it needs rinsing often: once it disappears under the foam in the sink, nobody rinses it.
How to hold it
Held above the glass, never resting on it: the mesh that has just strained should not touch the rim. The handle sits between ring finger and little finger, and with a cone the angle matters more than with a flat mesh, because there is only one exit point. Aimed well, the stream falls in the centre of the glass even when the glass is narrow or already garnished.
Care
Rinse straight after every use, and run a soft brush from the inside outwards, so residue comes out instead of being pushed into the weave. Dishwasher safe if the spray reaches the mesh. Check the Selene against the light now and then: on fine mesh a single stretched point lets through what should have been caught.
FAQ
Why is the bowl long? To take the whole pour without filling up, and to increase the straining surface.
Is the mesh fine? Yes, it catches small particles too.
Does it replace a Hawthorne strainer? No: the Hawthorne sits on the tin, this one over the glass.
How do I clean it? Straight after use, with a soft brush run from the inside.
Should it rest on the glass? No, hold it a couple of centimetres above the rim.
Is it needed for every drink? For drinks shaken with citrus, fruit or mint. On clear stirred drinks a fine strain is not needed, because there is nothing to catch.
The more you buy, the less you pay: 4 pieces -5%, 6 -7%, 8 -10%, on the same item.
