The fine strainer in two lines
This is the 85mm fine strainer: it does not replace the other strainers but works with them, held over the glass as the drink goes through.

Fine straining, and how it is done
The technique is called fine strain (or double strain), and it takes two hands: one holds the tin with the spring strainer on top, the other holds the fine strainer over the glass. The liquid passes through two filters in a row, one coarse and one fine, and what stays in the mesh is plain to see: ice shards, lime pips, strands of pulp, bits of mint. Everything that should not have ended up in the drink.

Why ice shards matter
Because they keep melting in the glass. A cocktail served up is built on a precise dilution, reached during the shake: if shards get in, that dilution keeps rising while the guest drinks, and by the second sip the drink is no longer the one that was made. On a Daiquiri or a shaken Martini the difference is clear.
85mm, and how to hold it
That is the size that covers the mouth of a standard coupe without resting on the rim. The strainer does not sit on the glass: hold it a couple of centimetres above, so the liquid falls and the dirty mesh never touches the rim that goes to the guest’s lips. Grip the handle with the ring and little fingers, leaving the thumb and index finger free to adjust the angle.
The limit of a flat mesh
It fills up. On a drink with a lot of pulp the liquid sits on the mesh, slows down, and you have to stop and tap the strainer halfway through the pour. That is why conical versions and deeper, finer meshes exist: they solve the same problem in two different ways. For a service with few fruit-based shaken drinks, the flat mesh remains the simplest and cheapest answer.
Care
Rinse the mesh straight after use, every time. Pulp and sugar that dry between the wires only come out with a brush, and a partly blocked mesh strains badly without showing it. It can go in the dishwasher, placed so the spray reaches the mesh as well as the handle. Check it against the light now and then: once the wires start to spread, the strainer has done its job.
