The inserts lift out, and that is the point
Cut fruit does not stay on the bar at the end of service: the inserts lift out and go into the fridge covered, and next morning they go back in the holder. It is the move that decides whether cut lime lasts one night or two, and without removable inserts the only alternative is decanting into other containers, which nobody does at three in the morning.
The height, to check before anything else
17.5cm is a tall profile. At a service station behind the bar that is no problem; on the front, facing the guest, a holder this tall separates the person making the drink from the person watching, and on a bar in full view that separation costs more than the convenience is worth. For the front of the bar, look at the low steel models, which stop at 9cm.
What really goes in it
Lime and lemon slices, orange wheels, olives. Those four garnishes cover most of the drinks on a short list, and wide compartments let you stack the slices instead of wedging them in. Twists and cherries are small and sit happily in a narrow compartment: if your list runs mostly on those, six compartments work harder.
The lid, and when to use it
Closed during breaks and whenever the holder is out of sight. It keeps off dust and stops the cut faces drying out, which is how a lime slice loses its looks before it loses its flavour. At peak service it stays open, because opening and closing it for every drink costs more than it protects.
Care
Wash the inserts, the lid and the holder itself every night: juice from the fruit collects at the bottom, and it is sugary. Dry everything before putting it back together, because standing water under the inserts is where the smell starts that you then notice on the next day’s fruit.
