The Eagle claw ice tongs in brief
The Eagle ice tongs are spring tongs by Lumian, 20cm long and weighing 135g. The two arms start from a U-shaped bow and are embossed along their full length. Each ends in an eagle’s foot with talons curled inwards. The material is stainless steel, the finish silver.
Who it is for
Bars that serve ice in front of the guest: the large cube in an Old Fashioned, the sphere in a neat whisky, the ice bucket at table service. Ice is not picked up by hand or with the glass, and the tongs are the tool the guest sees at that moment. Kitchen tongs do the job; the eagle’s foot makes it part of the service, in speakeasies and hotel bars where the mise en place is in full view of whoever sits at the bar.
At home they are the tongs for the drinks trolley and the ice bucket on the table, and a gift for someone who already has a shaker and jigger and wants a piece that gets noticed.

How claw ice tongs work
The flat tips of ordinary ice tongs touch a cube on two faces. On a small cube that is enough; on a large cube or a sphere the grip comes down to two points, and the ice slips as soon as it gets wet. The talons of the eagle’s foot are curled and close round the ice from several sides, like a hand: the large cube stays put on its way from the bucket to the glass, and the sphere does not roll out between the tips.
Weight matters. A hundred and thirty-five grams over 20cm is noticeable in the hand: the spring does not give on the first heavy cube and the tongs do not bend when opened. Twenty centimetres is enough to reach the ice in the bucket without your fingers touching the rim.

Where to keep them at the bar
Next to the ice bucket or the ice well on show, not in the drawer under the counter. Claw ice tongs left on the bar top, resting on a folded napkin or a saucer, show the guest that the ice is only touched with them. For crushed ice and small cubes taken by the handful, the scoop is still faster during the rush.
The claw ice tongs alongside the others
For everyday ice there are the 18cm ice tongs, plain and undecorated. For garnish, where you need precision rather than grip, there are the 30cm Lumian garnish tweezers. All the tongs are in the tongs category.
The more you buy, the less you pay: 4 pieces -5%, 6 -7%, 8 -10%, on the same item.
Care
Hot water and mild detergent at the end of service, with a soft brush between the talons and in the embossing on the arms, where water leaves limescale. Dry straight away with a cloth so the polished steel stays free of marks. Hand washing keeps the embossed detail bright for longer.
