The smooth bar spoon in brief

Who it is for
Bartenders who stir with the handle held still between thumb and index finger, resting the stem on the rim of the mixing glass and letting only the bowl run round the wall. The muddler head, and what not to ask of it
The flared bell crushes a sugar cube, mint leaves and soft fruit. On mint, press and nothing more: twisted leaves tear and the drink turns bitter. For lime wedges and firm fruit you need a muddler with a wide head, because the head of a spoon is the width of a thumb and cannot take that force.
How many smooth bar spoons per station
Two per bartender. A spoon that has stirred a drink with syrup or a coloured amaro does not go into the next Martini, and nobody stops mid-ticket to wash it.
