The 30cm bar spoon in two lines

For anyone starting out, and for any station that needs more than one spoon. It is the cheapest tool in the whole mixing kit and the one used most times in a night, because it also picks up a cherry, takes a taste and pushes the ice down.

Why the stem is twisted
A bar spoon turns between the fingers; it is not moved with the arm. The twist gives the thumb and index finger something to grip as they push and pull in turn while the bowl stays against the wall of the vessel: the ice turns as one block instead of knocking about, so it does not chip and does not dilute more than it should. A smooth stem does not allow that movement, which is why every bar spoon has had a twist for at least a century.
How to learn the move
Hold the spoon between the middle and ring fingers, with the thumb and index finger free to turn the stem. Keep the back of the bowl against the glass and the face towards the centre, always in contact with the wall. It feels clumsy at first and becomes automatic after twenty goes: it is the move you see bartenders make, and it is what separates a properly stirred drink from one that has just been swirled.
How many to keep at the station
At least two. One 30cm bar spoon almost always sits in the mixing glass or next to the bottles, and as soon as it is used for a garnish or a taste it is dirty: with only one you either wash it every time or use it dirty. It costs little precisely because it is meant to be bought in numbers.
What else it does
It measures, for a start. In trade practice the bowl of a bar spoon holds about 5ml, a teaspoon, and that is the unit many classic recipes use for syrups and modifiers. It also pushes the ice down before you pour, fishes out a garnish that went into the wrong glass, and layers: rest the back of the bowl against the wall and let the liquid run down over it.
Care
Untreated stainless steel, so it goes in the dishwasher without a problem. Dry it to keep marks off the polished stem, and keep it for stirring rather than prising things open, which is the usual way the neck between bowl and stem gets bent.
