Why 40 centimetres
Forty centimetres reach the base of a 28oz tin and a tall mixing glass without the hand going into the glass. Under 30cm a spoon only suits short glasses; over 45cm it becomes awkward in a tight station, because the handle knocks against the back bar as you stir.
