The stainless steel ice bucket in two lines
The Bars Classic Line ice bucket is a mirror-polished stainless steel bucket, 21.5cm across and 21cm high, with two side handles and a band of raised ribs at the base. It does two jobs: keeping a bottle cold at the table, and keeping ice within reach of the tongs on the bar. It fits the tubular stand from the same line, which has a 22cm ring.
Who it is for
For the restaurant and wine bar that bring the bottle to the table and leave it there, in ice and water. For the cocktail bar that wants ice served in a container worth looking at, for a bottle at the table or a gin and tonic served in two stages. For the hotel, for room service and the terrace bar. During the rush it is the piece you pick up by the handles and carry full without it slipping from wet hands.

The ice bucket’s dimensions, and what fits inside
A 21.5cm mouth leaves room for a wine bottle standing upright with ice all round it: wine chills through contact with iced water, not from ice alone, so the service rule is half ice and half water. Twenty-one centimetres of height covers the body of the bottle up to the shoulder, and the neck stays out for the grip. For bar ice, the same size holds the cube supply for a table service.
The mouth is flared: the bucket is wider at the top than at the base. It stands steady on the table and drops from above into the stand’s ring, where it hangs by its narrower base.

With the stand, or on its own
On its own it sits on the table or the bar. With the 73cm tubular stand it stands beside the table, at the height of the waiter’s hand, and the table stays free for plates. The two pieces are also sold together in the ice bucket and stand kit, for less than the two bought separately.
How many ice buckets the floor needs
The rule for anyone serving wine by the bottle is simple: one ice bucket for every bottle that can be open at a table at the same time, plus a spare in the wash. In a forty-cover dining room with whites and sparkling wines on the list, that is six to eight. The Classic line bucket stays in the maker’s catalogue, so the floor can be completed later with the same piece.
Steel or plastic
A plastic bucket costs less and keeps the cold just as well. What changes is the table: mirror steel next to the bottle says the wine has been served, plastic says it has been put down. And steel does not dull with scratches from the ice or crack if it is dropped empty on the floor.
Care
Empty it, rinse it and dry it straight away with a cloth, which keeps the polish free of limescale marks. No scourers: they mark mirror-polished steel.
