40cm, the length that covers everything
The rule is always the same: the spoon has to clear the rim of the tallest vessel you use, because below that length the grip drops close to the liquid and the stir loses control. 30cm is enough for glasses; 45cm is needed only for the deepest vessels. The teardrop end, and its job
It is for layering: rest its back against the inside wall of the glass and pour the liquid over it, so it settles on the layer below instead of mixing in. That is how layered drinks and floats of cream or red wine are built. It is also the end you crush a sugar cube with when nothing else is to hand, although a model with a disc is better suited to that job.
Plating and washing
The five finishes are outer coatings, and industrial dishwasher cycles cloud them in patches for good: hand wash with mild soap and dry straight away. If you want a spoon that goes in the machine at the end of the shift, choose a plain steel model of the same length, which also costs less.
How to stir
The stem turns between thumb and forefinger while the bowl stays against the wall of the vessel: you move the spoon, not the arm, and the ice turns as a block without knocking or chipping. Twenty or thirty turns are enough, and the guide is not the clock but the frost forming on the outside: when the glass or metal turns opaque, the drink is ready.
How many a station needs
At least two, and ideally different ones. The spoon gets dirty with every garnish picked up and every taste, and with only one you end up washing it constantly or using it dirty. At a bar in full view of the guests, keep a plated Drop bar spoon for the drinks you make in front of them and a plain steel one for the working rhythm, which goes into the dishwasher with everything else at the end of the shift.
