This is a four-cavity large cube ice mould in food-grade silicone: it makes single cubes that fill a low glass on their own.
Who it is for
For bars that serve spirits neat and drinks for slow sipping. A large cube has less surface in relation to its volume than four small cubes, so it melts more slowly and releases much less water into the glass.
The difference between an Old Fashioned and dirty water
That is literally it. With small ice, dilution runs fast: after ten minutes a well-built drink has become something else, and on a cocktail sipped slowly in conversation those ten minutes are the norm, not the exception. A single piece slows the process, for a geometric reason before a technical one: ice melts from the outside, so what counts is how much surface touches the liquid, and one large cube has less than four small ones of the same total volume.

The surface sum, in two lines
Take the same volume of water and split it into eight pieces instead of one, and the exposed surface doubles. Doubling the surface doubles the rate at which the ice absorbs heat, so it chills faster and dilutes faster. The large cube sits at the opposite end of the scale: it chills more slowly, and that slowness is what you buy it for.
Which glasses it needs
Low, wide ones: old fashioned, rocks, short tumblers. In a tall, narrow glass a cube this size either does not fit or sits at the bottom and leaves all the liquid above it warm, the opposite of what you set out to solve. For collins and highball glasses the right shape is the spear, which slides straight down and fills the height.
How to serve it
The cube goes into the glass before the liquid, picked up with tongs rather than fingers: the warmth of the hand marks the surface and clouds it exactly where it was touched. With a neat spirit it also helps to rinse the cube for a moment under cold water, which removes the surface frost that would otherwise melt at once and put the first water in the glass. Two seconds that change the first sip.

A single piece in a low glass is the visual sign of a drink made with care, and it is recognisable from across the room. It is worth bearing in mind when building a menu: a cocktail served over a large cube can hold a different price from one served over small cubes, and the cost difference to the venue is close to nothing.

Food-grade silicone, so dishwasher safe. Wash and dry it between batches, because leftover water makes the new ice stick. Keep it level in the freezer and away from strongly scented food, because ice picks up odours, and in a neat spirit that shows more than anywhere else.
