The small ice cube mould in two lines
This is the small ice cube mould in food-grade silicone, with eight cavities: cubes larger than freezer cubes, but not so large that one fills a glass on its own.
Who it is for
For anyone who wants one size that works for almost everything. It suits bars without freezer space for three different moulds that need to cover stirred, shaken and long drinks with the same piece.
Size matters more than it seems
A small cube melts fast and waters the drink down; a huge cube does not fit tall glasses and leaves the top of the drink warm, because it only chills the liquid it touches. This middle size fills a tumbler well and lasts through a whole drink: the small ice cube mould is the sensible compromise between the slow melt of a single block and the convenience of small cubes.

Why the tin needs ice, not water
A common mistake is shaking with small or already wet ice. In the tin, ice should be plentiful and dry: too little and it all melts, so the drink comes out watery; wet ice starts diluting before the first shake. Eight cubes of this size fill a 28oz tin two thirds of the way, the right proportion for the pieces to move and chill instead of turning in lukewarm liquid.
Eight per mould, and how to organise stock
Eight cubes cover one drink built in the glass or one shake: one mould is the stock for a single cocktail, and an evening needs several batches. Bars making their own ice fill the moulds in the morning, empty them into a bag or closed container and start again: moulds are for making ice, not for storing it.
Why this size suits a first mould
Because it does not force a decision. Someone opening a bar or kitting out a home bar does not yet know which drinks they will really make, and buying three moulds to find out they use one is an avoidable cost. The small ice cube mould covers most cases with one piece, and the specialist shapes, the sphere for neat spirits and the spear for tall glasses, can follow once the menu has found its direction.
Keep silicone level
This applies to all flexible moulds. If the freezer shelf slopes or the mould rests on a bag, the water spreads unevenly and the cubes come out in different sizes, some cavities short and others overflowing and fusing the cubes together. A level, clear shelf solves it with nothing else needed.
Care
Dishwasher safe. Wash and dry the mould between batches, because leftover water makes new ice stick to old, and keep it away from strong-smelling food in the freezer: ice takes on smells, and in a clear drink a freezer taste comes through.
