The ice cube tray in two lines
This is the professional ice cube tray in food grade silicone with 32 wells, on a removable rigid support that keeps it flat in the freezer.
Who it is for
For anyone making their own ice. Thirty two cubes per tray means two or three rounds cover an evening, and the rigid support is what makes that workable rather than a matter of luck.
The trouble with soft trays, and how it gets solved
Anyone who has used them knows it: they bend when you move them full, water runs over the edges, and what you find in the freezer is one block instead of separate cubes. The rigid frame removes exactly that problem, because the silicone sits on a structure that does not flex: you fill it on the worktop, carry it to the freezer with one hand and set it down wherever there is room, even on a shelf that is not perfectly level.

Taking one out at a time, and why that counts
With a traditional tray, getting two cubes means twisting the lot and ending up with twelve in your hand and two on the floor of the freezer. Silicone presses out from below, well by well: what you need comes out and the rest stay where they are, so they do not thaw and they do not weld together. On a station working from house made ice that is the difference between an orderly store and a bag of stuck lumps.
How clear ice is made
The white in the middle of a cube is not dirt: it is air dissolved in the water, pushed inwards while the freezing runs from the outside in. Clear pieces need directional freezing, meaning letting the water freeze from one side only with the others insulated, so the bubbles get pushed into the part that freezes last and that part gets discarded. With an ice cube tray in an ordinary freezer the pieces stay slightly cloudy in the middle: that is normal, and it is a fault only if the ice is served on its own in a glass.
How much ice you actually need
More than you would think. One long drink built in the glass takes eight or ten cubes, a shaken drink uses as many again in the tin, and most of it does not end up in the glass but in the sink. Hence the sums: 32 wells cover roughly two or three complete drinks per round, so an evening takes several trays or several cycles, and it pays to fill them all in the morning.
Care
Wash and dry the silicone before filling it again, because water left between cycles makes the new cubes stick to the old ones. Dishwasher safe with the frame removed. Keep it away from strong smelling food in the freezer: ice takes up odours with surprising ease, and a cube that tastes of the freezer shows in a clear drink.
FAQ
How many cubes does the ice cube tray make? Thirty two at a time.
What is the frame for? Keeping the tray flat in the freezer, so the water stays in and the cubes stay separate.
Can one cube be taken out on its own? Yes, by pressing from below well by well.
Is it dishwasher safe? Yes, with the frame taken off.
Does the ice come out clear? A white veil stays in the middle: that is air, and removing it takes directional freezing.
How many trays does an evening take? It depends on the service, but one tray covers two or three complete drinks per cycle: a full night is worked in several rounds.
The more you buy, the less you pay: 4 pieces -5%, 6 -7%, 8 -10%, on the same item.
