The grapefruit knife in two lines
The grapefruit knife has a narrow, curved 10cm blade, 1.2mm thick, on an 11cm black handle: 21cm overall. The curve matches the inside of a citrus cut in half. The blade goes in between the flesh and the peel and runs round the edge without piercing the skin.
Who the grapefruit knife is for
For two different places in the same hotel. At the bar, for anyone with a Paloma, a Greyhound, a Salty Dog on the list, or drinks garnished with a pink grapefruit segment: a segment without its membrane sits on the rim and does not fall apart. In the breakfast room, for whoever serves half a grapefruit to be eaten with a spoon, the flesh already freed from the peel and divided into segments.
In both cases, doing it by hand with a straight knife takes time and leaves flesh on the peel. With the curved blade one pass goes all the way round, and no flesh is left on the peel.

How to use the grapefruit knife
Cut the grapefruit in half across the middle. Hold one half in the hand, cut side up, slide the blade in between the flesh and the white pith and turn it all the way round: the curve of the blade follows the curve of the peel. Then run the blade along the membranes between the segments, one by one. The segments come out whole, without the membrane, and the peel stays intact.
The same move works on oranges and citrons, when clean segments are needed for a garnish or a fruit salad for the buffet.
For the Paloma and grapefruit drinks
A pink grapefruit segment on the rim of a tall tumbler is the Paloma garnish. Without its membrane it does not curl and does not drip juice on the bar top while the drink waits to go out. Whoever preps the segments during mise en place keeps them in a covered tub, in the fridge, and the night starts with the garnish ready.
The breakfast grapefruit half
On a hotel buffet the grapefruit half is presented with the flesh already freed and divided: guests eat it with a teaspoon, without sawing at the peel at the table. The grapefruit knife does the job in prep, early in the morning, on dozens of halves in a row. The 11cm handle keeps the hand away from the juice, and the narrow blade goes between the segments without crushing them. The prepared halves are kept covered in the fridge, cut side up.

What it pairs with
The grapefruit knife works on the half already cut. Cutting the fruit needs a knife with a longer blade; for peels, the curved paring knife, which works in the hand on the whole peel.
Grapefruit knife FAQ
Does it work on oranges too? Yes, on any citrus cut in half: orange, grapefruit, citron. On a lime the blade is longer than the fruit.
Does the peel stay whole? Yes, the blade runs between the flesh and the white pith. The empty half can be used as a cup for a garnish or a dessert.
Is it dishwasher safe? The manufacturer does not declare it: wash it by hand.
