The pineapple corer in two lines
The pineapple corer is a 24cm shaft in 18/0 stainless steel, with a spiral blade at the bottom and an ABS handle at the top. Cut the crown off the pineapple, set the corer in the centre and turn it like a corkscrew. When it reaches the bottom, pull it up: a spiral-cut cylinder of flesh comes out without the core, and the shell stays whole.
Who the pineapple corer is for
For anyone who works fresh pineapple every night. For tiki bars and venues with a Piña Colada, a Painkiller or a Jungle Bird on the list, where pineapple goes into the drink and onto the rim. For catering and hotels preparing fruit for the buffet. With a knife, a pineapple means taking off the skin, the eyes and the core, and part of the flesh goes with the skin. With the pineapple corer, skin and core stay where they are, and the flesh comes out in one piece.

The whole shell, for service
What makes the difference at the bar is what is left afterwards. The shell comes out empty and whole, with even walls, and becomes the vessel for the drink: fill it with crushed ice, pour in the Piña Colada, put the crown back on top as a lid. It is one of the most photographed serves of a tiki night, and it costs only the pineapple you had bought anyway.
The cylinder of flesh is sliced on the board, and the spiral already divides it into rings: that is why it also works as a pineapple slicer. Wheels for the rim of the glass, pieces for the blender, cubes for juice.

The flesh for drinks
In tiki drinks pineapple comes in three forms: the wheel on the rim, fresh juice and flesh in the blender. The cylinder from the pineapple corer covers all three. The first slices become wheels and half wheels for the garnish, with a leaf from the crown tucked alongside; the rest goes in pieces into the juicer or the blender. Without the core, which is fibrous and less sweet, the juice comes out cleaner and the Piña Colada smoother. Whoever preps fruit during mise en place keeps the whole cylinder in the fridge and slices it during the night.
How to use it
- Cut off the crown and set it aside, if the shell will be used as a vessel.
- Set the pineapple corer in the centre of the fruit and turn it, holding the pineapple steady on the board.
- A finger’s width before the bottom, stop turning and pull the shaft out: the cylinder of flesh comes up with it.
- Slide the flesh off the shaft and slice it on the board.
Leave the bottom of the pineapple intact: if the blade pierces it, the shell no longer holds liquid.

Pineapple corer FAQ
Does the pineapple corer work on every pineapple? On normal-sized ones. On a very small pineapple the blade comes too close to the skin and the flesh brings a few eyes with it.
Is it dishwasher safe? No, Hendi declares it not dishwasher safe: rinse it straight after use, before the pineapple sugar dries on the spiral.
Can the shell be used to serve the drink? Yes, that is why the bottom stays closed: the empty shell holds the drink and the ice.
Knives, boards and fruit prep equipment are in the boards and knives category.
