The Diamond old fashioned is a 320ml glass with a diamond cut over the whole wall, 85mm tall, in packs of six. It is the cut version of the classic rocks glass: the facets multiply the light passing through the liquid, and on an amber drink the effect shows from the other side of the room.

Who it is for

For venues that want the drink to be noticed before anyone describes it. Where service happens in view and the glass crosses the room in a server’s hand, a cut piece does a job no line on the menu can do. It is a glass to show off, not an anonymous one for rotation, and it should be chosen knowing it will take that role.

How a diamond cut works

A smooth wall lets light straight through; a faceted one refracts it in several directions, so the colour of the liquid repeats along the edge of every facet. On a Negroni, a Boulevardier or a Rusty Nail, with their deep amber red, the glass looks lit from inside. On a pale or clear drink almost nothing happens, which is why this cut belongs to spirits glasses and not to long drink glasses.

The drawback nobody mentions

The cut works by refraction, so it needs a light source to hit it. In a dimly lit room, the normal condition of a speakeasy, a heavily cut glass gives less than the catalogue suggests, and a thick smooth glass gives more because it reflects the little light there is instead of breaking it up. If the bar counter has spotlights or a service light over the station, the Diamond old fashioned uses them; if the room is deliberately dark, look at vertical fluting or irregular relief instead. On the practical side, the facets give a grip that smooth glass does not have, and on a glass that is always covered in condensation that cuts down the uncertain grips behind most breakages on the floor.

Choose the Diamond old fashioned if

You serve amber drinks and the bar is well lit. On pale, clear or layered cocktails the cut gives much less, and a smooth model leaves more room for the drink without breaking up how it reads.

320ml: what fits

Two or three standard cubes and the pour, or one medium cube. It is a short double, so a single 5cm cube goes in but leaves little room for liquid: if you work with that ice format, move up to 340 or 360ml. For spirits served neat the size is comfortable, because the empty space above the pour collects the aroma.

Care

Facets hold more residue than a smooth wall, and that is the only price of the pattern. With sweet liqueurs, give the glasses a rinse before the wash cycle so the sugar does not dry into the corners of the cut.
